Gluten Free Cranberry Jam Bars

September is Fall Flavors month! I’m so glad summer is coming to a close. Is it just me or was this summer exceptional hot?! Bring on sweaters and pumpkin spice lattes! This recipe for gluten free cranberry jam bars just screams fall and is one on the recipes I grew up with. Easy to make with only 8 ingredients, you’ll be feasting on this delicious dessert in about 30 minutes!

While I used whole berry cranberry sauce (yes, like the can of cranberry sauce you use at thanksgiving 😉), you can really use whatever jam or jelly you’d prefer. You could even sub in a can of pie filling, if that floats your boat. Do whatever your heart desires. Here’s the steps for making these super duper easy treats.

1. Get yourself a square baking dish of 8 inches by 8 inches. Coat with some shortening so those delicious jam bars don’t stick. 

2. Preheat the oven to 350 degrees.

3. In a large mixing bowl (or kitchen aid. I recommend the kitchen aid to save yourself from exerting any more effort than actually necessary. Let the machine to do the work!), combine dry ingredients together. I mean the flour, oats, coconut, sugar, baking powder, and salt. You know, anything that’s not wet.

4. Once those dry ingredients are combined, add the melted butter and the egg to the dry mixture and stir to combine. You should have a shortbread dough like consistency.

5. Take 1/2 of the dough and press it into the bottom of the baking dish.

6. Open the can of cranberry sauce and spread it on top of the pressed dough.

7. Sprinkle the remaining dough over the top of the cranberry sauce evenly. You can add more coconut too if you want. I did.

8. Place baking dish in preheated oven and bake 25-30 minutes or until lightly browned.

9. Remove your dessert from said oven and cool completely. Gluten Free desserts tend to crumble when hot. Resist the temptation to dig in until the bars are cooled down! 

10. Once cool, cut into squares and devour those suckers! Enjoy!

Gluten Free Cranberry Jam Bars

Ingredients

  • 2 Cups Gluten free flour I used Bob’s Red Mill 1-to-1
  • 1/2 Cup Gluten Free Rolled Oats
  • 1/2 Cup Shredded coconut
  • 3/4 Cup white sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 Cup melted butter
  • 1 Large egg
  • 1 14 oz canned whole berry cranberry sauce I used ocean spray

Instructions

  • Preheat oven to 350 degrees. Coat an 8x8 baking dish with shortening. Set aside.
  • In a large mixing bowl (or kitchen aid) combine dry ingredients together: flour, oats, coconut, sugar, baking powder, and salt.
  • Add butter and egg to dry mixture. Stir to combine.
  • Press 1/2 of the dough into the bottom of your coated baking dish.
  • Pour cranberry sauce on top of pressed dough. Spread an even layer on top of dough.
  • Sprinkle the rest of the dough mixture over the top of the cranberry sauce.
  • Bake in preheated oven for 25-30 minutes. Remove from oven and allow to cool completely. Cut into squares and enjoy!
